Raw Mango Chutney

You need :
Raw mangoes : 2 (finely grated)
Red chillies : 6-9 ( depending on how spicy you want it to be)
Fenugreek seeds( Menthya): Half spoon
Mustard seeds ( Saasive ): 1 Spoon
A pinch of asafoetida ( Ingu )
A small piece of tamarind
A small piece of jaggery

Method :
Fry the red chillies, fenugreek seeds and half a spoon of mustard seeds in a frying pan for a couple of minutes.
Add them together with grated raw mango, asafoetida, tamarind and jaggery pieces, salt and grind them together until it becomes a rough paste. Take care not to not add too much of water while grinding them into the paste.
Seasoning :
Take a spoon of oil and heat it on low flame. Add half spoon of mustard seeds and a pinch of asafoetida to the oil and let the mustard seeds flutter. Add it to the chutney and mix well.

Raw mango Chutney is ready! It tastes best with rice, chapathis and rotis!
